Some mornings ask to be rushed, and some ask you to linger. The first cool mornings of the season belong firmly in the second camp — the kind that call for a warm skillet, a pot of coffee, and a stack of pumpkin pancakes tall enough to make the whole table smile.

Pumpkin pancakes are one of those breakfasts that feel special without asking much of you. The batter comes together with pantry staples, the pumpkin keeps every bite tender, and a pinch of warm spice fills the kitchen with the smell of fall before the first plate ever hits the table.
